In The Beginning

So we did a thing!

While Kim has decades of  experience in the food and bar business, I only have a little experience and a food truck is new to us both.  With that in mind I have joined many Facebook groups, you tube pages and other sources of information. (both good and bad) Just to pick up tips and tricks as we get set up and do our build. One of the big debates on many of these pages is... AC yes or no? Many people say its a waste of money and power. Keep in mind most of the time the truck is running a generator and you only have so much power to go around.   On the other hand we have a 36 inch flattop and two deep fryers putting out a total of 315,000 BTU of heat. That's double what most people are using to heat their house, and its in a 16 x 7.5 foot space. We went with yes and just added the largest roof unit AC we could find... any thing is better than nothing and at least we can have this blowing directly on the cook and counter person to help.

Its been a while... here's why

So We were suppose to go on vacation for ten days, and a huge tree fell on our house and almost hit our food trailer... did hit my flatbed trailer. So we had to stay and deal with all that mess. But once we had, we went on a food tour of the French quarter! Check out the pics on our gallery page.

So Close

We are almost to the end. Hollydays  weather and a few other things are going to tie up January,  but she will be done very soon!

A Little Closer

Fell behind but by the end of the week celling, gas and gear should all be in... then just to finish up the plumbing. Looking at the end of January  or so for our opening... more to come!!!

Extra Hands

(10-30-22) So we finally got the hood in place today thanks to a few guys that gave up their weekend to come and help lay it out, hold it up and bolt it in place. Thanks a lot guys for the hand! Now I can get my ceiling in, then the floor, my water tanks and plumbing! Moving right along.

Never Enough Time

 As the trucks and vans keep showing up and more and more stuff gets piled into our house... I only have so much time to work on this... weekends and after work, the weather has not been helping. But we keep moving along. (I should have built a garage first!)

Next we have to get the hood in place and then the flooring and ceiling. After that we can do the fire suppression. plumbing and wrap up the last few things on our electrical... not to far to go... no really!

It's Starting To Come Together

After a few days the window was in, the insulation went in and the electrical got roughed in... now the walls are covered and the electrical is done... except for the hood/blower and a  few finish items.


It Seemed So Simple

Not really... We knew we were taking a lot on... but we started out with a 2022 Lark 16 foot utility trailer and on day two... Started cutting holes in it. I'm not sure Kim was feeling to good about seeing it with holes! Every thing will have to be added... water, electrical, gas, walls, flooring and all the cooking and cold storage gear.

Check it Out!

I know its been a long time but life got in the way of our business plans!!! So any way we have relocated our food trailer to Western Tennessee! We will be getting every thing in place for our new location and new menu over the next six months and will have updates for you very soon!!!!
